Baked Rice Pudding



If you've ever been to Turkey, you must have seen the special dessert shops that sell dairy desserts called "Sütlü Tatlılar" in Turkish. They are a nice alternative to heavier and sweeter desserts like baklava. One of the most popular dairy desserts is rice pudding (sütlaç) and it's fancier version- baked rice pudding (fırın sütlaç). It tastes like a sweet rice congee with milk.


INGREDIENTS
  •  1 litre milk
  • 1 glass/cup rice
  • 4 glasses/cups water
  • 1.5 glass/cup sugar
  • 2 tbsp rice flour
  • 1 egg yolk
- Wash the rice well and cook with 4 cups of water until the the water is absorbed

- Add the milk, sugar and rice flour (you can mix the rice flour with a bit of milk before you add it in to prevent the flour forming clumps)

- Stir the mixture until it boils and let it boil for another 5 minutes 

- Put aside about ½ cup of the pudding and divide the remaining into oven proof bowls

- Beat the egg yolk and add it to the pudding  you set aside and spread it on top of all the bowls

- Bake the puddings in the oven until the tops are browned. 

Serve once its chilled preferably with a scoop of your favorite ice cream. I especially like it with cinnamon ice cream!

Note: If you don't want to bake the pudding, once you boil it, put it in bowls and chill.
