Poached Eggs Turkish Style (Çılbır)

You might think that yoghurt and egg will be an odd combo, but all it takes is one serving of "Çılbır" to change your mind. Çılbır is a great comfort food you can eat any time of the day. It can be prepared in no time and all you need is some eggs, yoghurt and fresh-baked crusty bread!

Below recipe is for one serving.

INGREDIENTS
  •  2 eggs
  • 1 tbsp vinegar
  • ½ glass/cup/125 gr yoghurt
  • 1 tbsp red pepper/paprika flakes
  • 1 tbsp butter (optional)
  • 1 clove garlic (smashed)
  • Salt
- Mix the yoghurt and garlic and place in a plate

- Fill half of a medium size pot with water and bring to boil

- Add the vinegar and salt

- Lower the heat so that the water keeps simmering

- Crack the eggs into two small bowls

- Using a spoon, swirl the water to create a whirlpool, and slowly drop each egg in the water. (you can do one at a time if you like)

- Let the eggs cook for about 3 minutes. The white should be cooked, but the yolk should still be runny.

- Using a slotted spoon, remove the eggs from the pot and place on the garlic yoghurt

- Melt the butter, add the pepper flakes and pour over the eggs

- Serve with some crusty bread
